Chef Robert Fong demonstrates his recipe for Lightly Fried Alaskan Halibut with Sweet Chilies and Jalapeños. In this easy-to-prepare dish, he breads fresh halibut with farm eggs, panko, flour, salt and pepper, and pan-fries the fish in grapeseed oil. Fong serves the tender, crunchy halibut with a splash of sweet chili sauce, lemon juice and jalapeño peppers. “Compare this with fish and chips!” he says.
