A look behind the scenes as students at the Bellingham Technical College Culinary Arts program meet their first major hands-on challenge: the International Buffets. Every Friday, for ten weeks during winter quarter, the chef trainees serve up a buffet for 60 diners at the College’s fine dining restaurant, Café Culinaire. It’s an experience that can’t be taught in a classroom—one that tests not only the students’ newly-learned culinary skills, but also their ability to work as a team.
